Every condition below has to be met on the food vending vehicle itself. Meet them all and the exemption is granted — miss one and you operate from a central preparation facility. Check (✔) if met, (X) if deficient.

Sufficient cooling and heating equipment
|
Equipment for cooling and heating food must be sufficient in number and capacity on the food vending vehicle to provide food temperatures as specified in Food Code Chapter 3 — Food. | ☐ |

Equipment for holding cold and hot food must be sufficient in number and capacity on the vehicle to provide food temperatures as specified in Food Code Chapter 3 — Food. Food is safely stored beyond operating hours. | ☐ |
